Yes, DNA polymerases with proofreading activity (3'→5' exonuclease) can be used to fill in a 5' overhang and remove a 3' extension. DNA Polymerase I, Large (Klenow) Fragment (NEB# M0210) is preferred because it works at 25°C, can be used in a variety of buffers, and can be heat killed.
