Beta-elimination (under alkaline conditions) will also result in degradation of the free carbohydrate from its reducing end (peeling). To prevent peeling, beta-elimination is typically performed under reductive conditions that convert the reducing sugar to its corresponding alditol. Sugar alditols are not substrates for fluorescent labeling by reductive amination.
